Our favorite dessert from Damascus; clotted cream (eshta) over a bed of semolina knafeh and topped off by pistachios.  Our clotted cream recipe took long hours to perfect, as it delicately combines ricotta cheese and different types of cream to resemble that 'eshta' taste back home.
